FERMENTATION |
after soft pressing , selected yeasts are added , the fermentation and the alcoholic maceration are conducted to the temperature of 26°C for 22/24 days. The following malolactic fermentation is made in steel and the wine matures in French oak barrels of 15 hl for 6/8 months. |
